Vietnamese Summer Rolls with Peanut Dipping Sauce

Ingredients

  • 8 rice paper wrappers
  • 4 ounces (115g) rice vermicelli noodles, cooked according to package directions
  • 1 block (400g) firm tofu, pressed and sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1/2 cup bean sprouts
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Fresh basil leaves

Peanut Dipping Sauce

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon maple syrup
  • 1 teaspoon chili garlic sauce (optional)
  • 1/4 cup warm water

Instructions

  1. In a small bowl, whisk together peanut sauce ingredients until smooth.
  2. Fill a large bowl with warm water. Dip one rice paper wrapper in the water for a few seconds, until softened.
  3. Lay wrapper flat on a clean surface. Place a few noodles, tofu slices, cucumber, carrot, bean sprouts, and herbs in the center of the wrapper.
  4. Fold bottom edge of wrapper over filling, then fold in sides and roll up tightly.
  5. Repeat with remaining wrappers and filling.
  6. Serve summer rolls with peanut dipping sauce.
