Vegan Spinach and Chickpea Fritters

Ingredients

  • 1 can (15 ounces/425 g) chickpeas, drained and rinsed
  • 1 cup (60 g) fresh spinach, chopped
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Olive oil, for frying
  • Vegan tzatziki sauce, for serving

Instructions

  1. In a food processor, combine chickpeas, spinach, onion, dill, parsley, garlic, lemon juice, flour, baking powder, salt, and pepper. Pulse until just combined, but still slightly chunky.
  2. Heat olive oil in a large skillet over medium heat.
  3. Drop spoonfuls of batter into the hot oil and flatten slightly.
  4. Fry for 3-4 minutes per side, or until golden brown and crispy.
  5. Drain on paper towels and serve warm with vegan tzatziki sauce.
