Ingredients
- 1 can (15 ounces/425 g) black beans, rinsed and drained
- 1 medium sweet potato (about 250 g), cooked and mashed
- 1/2 cup chopped red onion
- 1/4 cup chopped cilantro
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup breadcrumbs
- Olive oil, for cooking
Avocado Cilantro Cream
- 1 avocado
- 1/4 cup cilantro leaves
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine mashed sweet potato, black beans, red onion, cilantro, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and breadcrumbs. Mix well.
- Form mixture into 4 patties.
- Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes per side, or until golden brown and heated through.
- Meanwhile, prepare avocado cilantro cream: In a blender or food processor, combine all ingredients and blend until smooth and creamy.
- Serve burgers on buns with avocado cilantro cream and your favorite toppings.
