Vegan Spinach and Artichoke Pizza

Ingredients

  • 1 batch pizza dough (store-bought or homemade)
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 1 (8 ounce) package vegan cream cheese, softened
  • 1/2 cup grated vegan Parmesan cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 cup shredded vegan mozzarella cheese
  • Olive oil, for brushing

Instructions

  1. Preheat oven to 450°F (230°C). Lightly grease a baking sheet or pizza stone.
  2. Roll out pizza dough to desired thickness and place on prepared baking sheet.
  3. In a large bowl, combine spinach, artichoke hearts, cream cheese, Parmesan cheese, onion, garlic, red pepper flakes, salt, and pepper. Mix well.
  4. Spread spinach mixture evenly over pizza dough. Top with vegan mozzarella cheese.
  5. Drizzle with olive oil and bake for 15-20 minutes, or until crust is golden brown and cheese is melted and bubbly.
