Vegan Spinach and Artichoke Dip

Ingredients

  • 1 (10 ounce/285 g) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce/400 g) can artichoke hearts, drained and chopped
  • 1 (8 ounce/225 g) package vegan cream cheese, softened
  • 1/2 cup grated vegan Parmesan cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup vegan mayonnaise
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Tortilla chips, pita bread, or vegetables, for serving

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine spinach, artichoke hearts, cream cheese, Parmesan cheese, onion, garlic, mayonnaise, red pepper flakes, salt, and pepper. Mix well.
  3. Transfer mixture to a baking dish and bake for 20-25 minutes, or until hot and bubbly.
  4. Serve warm with tortilla chips, pita bread, or vegetables.
