Ingredients
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/2 cup chopped celery
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup vegan mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 8 slices bread of your choice
Instructions
- In a large bowl, mash chickpeas with a fork until mostly smooth but still slightly chunky.
- Add celery, onion, parsley, dill, mayonnaise, mustard, lemon juice, salt, and pepper. Mix well.
- Spread chickpea salad on bread slices and top with remaining bread slices.
