Sweet Potato and Peanut Curry

Ingredients

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 large sweet potatoes (about 600 g), peeled and cubed
  • 1 can (14 ounces/400 g) diced tomatoes, undrained
  • 1 cup (240 ml) vegetable broth
  • 1/2 cup (120 g) creamy peanut butter
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Heat coconut oil in a large pot over medium heat. Add onion and cook until softened.
  2. Add garlic, curry powder, ginger, and cayenne pepper (if using). Cook for 1 minute.
  3. Stir in sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until sweet potatoes are tender.
  4. Remove from heat and stir in peanut butter until smooth.
  5. Season with salt and pepper to taste. Garnish with cilantro and serve over rice.
