Ingredients
- 1 tablespoon coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper (optional)
- 2 large sweet potatoes (about 600 g), peeled and cubed
- 1 can (14 ounces/400 g) diced tomatoes, undrained
- 1 cup (240 ml) vegetable broth
- 1/2 cup (120 g) creamy peanut butter
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- Heat coconut oil in a large pot over medium heat. Add onion and cook until softened.
- Add garlic, curry powder, ginger, and cayenne pepper (if using). Cook for 1 minute.
- Stir in sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until sweet potatoes are tender.
- Remove from heat and stir in peanut butter until smooth.
- Season with salt and pepper to taste. Garnish with cilantro and serve over rice.
