Lentil and Vegetable Curry

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 sweet potato, peeled and cubed
  • 1 cup (150 g) chopped cauliflower florets
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 cup (240 ml) vegetable broth
  • 1 cup (200 g) red lentils, rinsed
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste
  • Cooked rice or naan, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
  2. Add garlic, curry powder, turmeric, cumin, and cayenne pepper (if using). Cook for 1 minute.
  3. Add sweet potato, cauliflower, green beans, diced tomatoes, vegetable broth, and lentils. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils and vegetables are tender.
  4. Season with salt and pepper to taste. Garnish with cilantro and serve over rice or with naan.
