Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (optional)
- 1 sweet potato, peeled and cubed
- 1 cup (150 g) chopped cauliflower florets
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 can (14 ounces) diced tomatoes, undrained
- 1 cup (240 ml) vegetable broth
- 1 cup (200 g) red lentils, rinsed
- 1/2 cup chopped cilantro
- Salt and pepper to taste
- Cooked rice or naan, for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
- Add garlic, curry powder, turmeric, cumin, and cayenne pepper (if using). Cook for 1 minute.
- Add sweet potato, cauliflower, green beans, diced tomatoes, vegetable broth, and lentils. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils and vegetables are tender.
- Season with salt and pepper to taste. Garnish with cilantro and serve over rice or with naan.
