Jackfruit Carnitas Tacos with Pineapple Salsa

Ingredients

  • 20 ounces (565 g) young green jackfruit in brine or water, drained and shredded
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • 8 corn or flour tortillas, warmed
  • Pineapple salsa, for serving
  • Chopped cilantro, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened.
  2. Add garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute.
  3. Stir in jackfruit, orange juice, and lime juice. Bring to a simmer, then reduce heat and cook for 20-30 minutes, or until jackfruit is tender and sauce has thickened.
  4. Season with salt and pepper.
  5. Fill tortillas with jackfruit mixture and top with pineapple salsa and cilantro.
