A fun and flavorful twist on traditional falafel, served as crispy waffles topped with a refreshing Mediterranean salad and tahini dressing.

Ingredients
For the Falafel
- 1 (15 ounce) can chickpeas, drained and rinsed
- 1/2 cup chopped onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon baking powder
- Salt and pepper to taste
- 1/4 cup all-purpose flour
For the Mediterranean Salad
- 2 cups chopped romaine lettuce
- 1/2 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and halved
For the Tahini Dressing
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a food processor, combine chickpeas, onion, parsley, cilantro, garlic, lemon juice, cumin, coriander, baking powder, salt, pepper, and flour. Pulse until well combined but still slightly coarse.
- Preheat a waffle iron. Spray with non-stick cooking spray.
- Scoop falafel mixture onto waffle iron and cook according to manufacturer's instructions until golden brown and crispy.
- While waffles are cooking, toss together salad ingredients.
- In a small bowl, whisk together tahini dressing ingredients.
- Top each waffle with Mediterranean salad and drizzle with tahini dressing.
