Vegan Version of Wiener Würstel With Sauerkraut

A classic Austrian dish gets a vegan twist! Our Wiener Würstel are tender and flavorful sausages made with plant-based ingredients, served with a side of tangy sauerkraut and potato dumplings.

Ingredients

For the Wiener:

  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

For the potato dumplings:

  • 2 large potatoes, peeled and grated
  • 1/4 cup all-purpose flour
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegan butter or oil

For the sauerkraut:

  • 1 head of cabbage, shredded
  • 1 tablespoon caraway seeds
  • 1 tablespoon apple cider vinegar
  • 1/2 cup water
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the lentils, breadcrumbs, nutritional yeast, smoked paprika, garlic powder, salt, and pepper.
  • Add the olive oil and mix until the ingredients are well combined.
  • Shape the mixture into small strings and place them on a baking sheet lined with parchment paper.
  • Bake the Wiener for 15-20 minutes or until golden brown.
  • While the Wiener are baking, prepare the potato dumplings by mixing the grated potatoes, flour, water, salt, and pepper in a bowl.
  • Shape the mixture into small dumplings and place them on a plate lined with parchment paper.
  • Bake the dumplings for 15-20 minutes or until golden brown.
  • Meanwhile, prepare the sauerkraut by mixing the shredded cabbage, caraway seeds, apple cider vinegar, water, salt, and pepper in a bowl.
  • Serve the Vegan Wiener Würstel with the potato dumplings and sauerkraut for a hearty and delicious vegan meal.
