A classic Austrian dish gets a vegan twist! Our Wiener Würstel are tender and flavorful sausages made with plant-based ingredients, served with a side of tangy sauerkraut and potato dumplings.

Ingredients
For the Wiener:
- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup nutritional yeast
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
For the potato dumplings:
- 2 large potatoes, peeled and grated
- 1/4 cup all-purpose flour
- 1/4 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegan butter or oil
For the sauerkraut:
- 1 head of cabbage, shredded
- 1 tablespoon caraway seeds
- 1 tablespoon apple cider vinegar
- 1/2 cup water
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the lentils, breadcrumbs, nutritional yeast, smoked paprika, garlic powder, salt, and pepper.
- Add the olive oil and mix until the ingredients are well combined.
- Shape the mixture into small strings and place them on a baking sheet lined with parchment paper.
- Bake the Wiener for 15-20 minutes or until golden brown.
- While the Wiener are baking, prepare the potato dumplings by mixing the grated potatoes, flour, water, salt, and pepper in a bowl.
- Shape the mixture into small dumplings and place them on a plate lined with parchment paper.
- Bake the dumplings for 15-20 minutes or until golden brown.
- Meanwhile, prepare the sauerkraut by mixing the shredded cabbage, caraway seeds, apple cider vinegar, water, salt, and pepper in a bowl.
- Serve the Vegan Wiener Würstel with the potato dumplings and sauerkraut for a hearty and delicious vegan meal.
