Tropical Coconut Rice Pudding with Mango and Lime

Ingredients

  • 1 cup white rice
  • 2 cups coconut milk
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 ripe mango, peeled and sliced
  • Zest of 1 lime

Instructions

  1. Combine rice, coconut milk, sugar, and salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.
  2. Remove from heat and let cool slightly.
  3. Divide rice pudding among four bowls.
  4. Top with mango slices and lime zest. Serve warm or chilled.
