Ingredients
- 1 cup white rice
- 2 cups coconut milk
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 ripe mango, peeled and sliced
- Zest of 1 lime
Instructions
- Combine rice, coconut milk, sugar, and salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat and let cool slightly.
- Divide rice pudding among four bowls.
