Spicy Peanut Tofu Stir-Fry

A quick and flavorful stir-fry combining crispy tofu, colorful vegetables, and a spicy peanut sauce.

Ingredients

  • 1 block (400 g) extra-firm tofu, pressed and cubed
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup chopped peanuts

Spicy Peanut Sauce

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon maple syrup
  • 1 teaspoon chili garlic sauce (adjust to taste)
  • 1/4 cup water

Instructions

  1. Toss tofu with cornstarch. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden brown and crispy. Set aside.
  2. Add remaining oil to the pan. Add onion and cook until softened.
  3. Add garlic, bell peppers, and broccoli. Stir-fry until vegetables are tender-crisp.
  4. In a small bowl, whisk together peanut sauce ingredients.
  5. Add tofu and sauce to the pan with vegetables. Stir-fry until heated through and sauce thickens slightly.
  6. Serve over rice or noodles, garnished with chopped peanuts.
