Ingredients
- 1 can (15 ounces) black beans, rinsed and drained
- 1/2 cup cooked brown rice
- 1/2 cup chopped onion
- 1/2 cup chopped red bell pepper
- 2 cloves garlic, minced
- 1/4 cup chopped cilantro
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1/4 cup breadcrumbs
- Olive oil, for cooking
Instructions
- In a large bowl, mash black beans with a fork until mostly smooth but still slightly chunky.
- Add brown rice, onion, red bell pepper, garlic, cilantro, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix well to combine.
- Stir in breadcrumbs.
- Form mixture into 4 patties.
- Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes per side, or until golden brown and heated through.
