Spicy Black Bean Burgers

Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup cooked brown rice
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup chopped cilantro
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • Olive oil, for cooking

Instructions

  1. In a large bowl, mash black beans with a fork until mostly smooth but still slightly chunky.
  2. Add brown rice, onion, red bell pepper, garlic, cilantro, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix well to combine.
  3. Stir in breadcrumbs.
  4. Form mixture into 4 patties.
  5. Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes per side, or until golden brown and heated through.
  6. Serve on buns with your favorite toppings.
