- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1/2 red onion, sliced
- 2 tablespoons olive oil

- 4 pita breads
- 1 cup hummus
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
Instructions
- Preheat oven to 400°F (200°C).
