Roasted Vegetable and Hummus Pita Wraps

Ingredients:
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1/2 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup hummus
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced vegetables with olive oil, salt, and pepper.
  3. Roast for 20-25 minutes, or until tender and slightly caramelized.
  4. Warm pita breads in the oven for a few minutes.
  5. Spread hummus on each pita bread.
  6. Top with roasted vegetables, parsley, and mint. Roll up and serve.
