Jamaican Jerk Jackfruit Tacos with Mango Salsa

Ingredients

For the Jerk Jackfruit:

  • 20 ounces (565g) young green jackfruit in brine or water, drained and shredded
  • 2 tablespoons (30ml) olive oil
  • 1 onion (150g), chopped
  • 3 cloves garlic, minced
  • 2 tablespoons (30g) jerk seasoning
  • 1 teaspoon (5ml) smoked paprika
  • 1/2 teaspoon (2.5ml) ground allspice
  • 1/4 teaspoon (1.25ml) cayenne pepper
  • 1/4 cup (60ml) vegetable broth
  • 2 tablespoons (30ml) lime juice
  • Salt and pepper to taste

For the Mango Salsa:

  • 1 ripe mango, diced
  • 1/2 red onion, finely diced
  • 1/2 red bell pepper, finely diced
  • 1/4 cup (30g) chopped cilantro
  • 1 jalapeño pepper, seeded and finely diced (optional)
  • Juice of 1 lime
  • Salt and pepper to taste

For the Avocado Crema:

  • 1 ripe avocado
  • 1/4 cup (60ml) plant-based milk (such as almond or soy milk)
  • 1 tablespoon (15ml) lime juice
  • Salt and pepper to taste

To serve:

  • 8 corn or flour tortillas, warmed
  • Lime wedges, for garnish

Instructions

  1. Prepare the jerk jackfruit: Heat olive oil in a large skillet over medium heat. Add onion and cook until softened. Add garlic, jerk seasoning, smoked paprika, allspice, and cayenne pepper; cook for 1 minute.
  2. Add shredded jackfruit and vegetable broth. Bring to a simmer, then reduce heat and cook for 20-30 minutes, or until jackfruit is tender and sauce has thickened. Stir in lime juice and season with salt and pepper.
  3. Make the mango salsa: While the jackfruit is cooking, combine all salsa ingredients in a bowl. Season with salt and pepper to taste.
  4. Make the avocado crema: In a blender, combine avocado, plant-based milk, lime juice, salt, and pepper. Blend until smooth and creamy.
  5. Assemble the tacos: Warm tortillas. Divide jerk jackfruit among tortillas. Top with mango salsa and avocado crema.
  6. Serve: Serve immediately with additional lime wedges on the side.
