Ingredients
- 2 ripe avocados
- 1/4 cup cocoa powder
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup raspberries
- 1 tablespoon sugar
- 1 tablespoon water
Instructions
- In a food processor or blender, combine avocados, cocoa powder, maple syrup, and vanilla extract. Blend until smooth and creamy.
- In a small saucepan, combine raspberries, sugar, and water. Cook over medium heat, mashing berries with a spoon, until mixture thickens slightly.
- Divide the avocado mousse evenly among four small bowls or ramekins.
- Top each with raspberry coulis. Chill for at least 30 minutes before serving.
