Chocolate Avocado Mousse with Raspberry Coulis

Ingredients

  • 2 ripe avocados
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup raspberries
  • 1 tablespoon sugar
  • 1 tablespoon water

Instructions

  1. In a food processor or blender, combine avocados, cocoa powder, maple syrup, and vanilla extract. Blend until smooth and creamy.
  2. In a small saucepan, combine raspberries, sugar, and water. Cook over medium heat, mashing berries with a spoon, until mixture thickens slightly.
  3. Divide the avocado mousse evenly among four small bowls or ramekins.
  4. Top each with raspberry coulis. Chill for at least 30 minutes before serving.
